Willowbrae produce artisan goat milk cheese in Rozelle, Sydney.
They work with a local farm in the Hawkesbury that has a small, much loved herd of goats. Half the milk comes from a mix of Toggenburg, Saanen, Australian Brown, Australian Melaan, and British Alpine, while the other half comes from the highly praised Nigerian Dwarf Goat. The milk is brought back to Rozelle where it is pasteurised, processed, and packaged on-site. Currently Willowbrae produce milk, yoghurt, kefir, fresh curd, marinated cheese, fetta, halloumi, as well as white mould ripened cheeses.
