However, if time is not on your side there’s no need to compromise the base of a wonderful meal, so here is the stock you would have made yourself if only you did have more hours in the day! Made rich with kangaroo and venison bones, vegetables and herbs, this stock has the natural flavour of game, making it a wonderful base for dumplings. To create a luscious sauce for venison, simply reduce equal measures of this stock with red wine - you could even add a hint of dark chocolate for something special. It is also a delicious foundation for a soup or risotto that can easily be seasoned to suit your palate.
